JOB SUMMARY AND ACCOUNTABILITIES:

Responsible for assisting the Executive Chef in all kitchen and meal service duties at Grand Tradition Estate and Gardens.  Including events and Veranda operations.

 

ESSENTIAL FUNCTIONS:                                                                                     

  1. Responsible for assisting the Executive Chef in all duties of the kitchen including: Preparing meals, expediting service, reviewing custom orders,menu development and ensuring product quality
  2. Oversee Veranda Restaurant operations including food quality, order speed and accuracy, menu development, and cleanliness.
  3. Direct kitchen staff, assign daily duties and manage breaks, develop and cross train all team members on preparation, presentation, safety, hygiene and health regulations. 
  4. Order, receive and inventory all food and kitchen products, maintain inventory rotation and product storage standards.
  5. Set the expectations for all kitchen team members in the Executive Chef's absence, work as a team for maximum productivity, speed, and accuracy.
  6. Any other tasks that might occur.

QUALIFICATION STANDARDS:

  1.   Minimum of a high school diploma or GED and five (5) years' experience in a fast- paced, high quality restaurant kitchen.
  2. Ability be able to work quickly, efficiently, and under deadlines.
  3. Must be able to work well with all levels of employees.
  4. Requires excellent communication skills.
  5. Must be able to follow directions, verbal and printed, including recipes and instructions.
  6. Requires extensive knowledge of food preparation, storage, cooking temperatures, health and safety regulations, etc. to maintain hygiene and food quality.
  7. Must be able to work with knives and all kitchen equipment and utensils.
  8. Must be able to train and mentor employees.
  9. Must be able to demonstrate leadership and to motivate others.

PHYSICAL STANDARDS:    

  1. Must be able to stand for long periods of time, walk, crouch, and climb stairs.
  2. Must be able to talk clearly and hear responses.
  3. Must have the ability to receive detailed information through hearing and to make discriminations in sound.
  4. Must be able to reach, grasp and finger objects and operate kitchen equipment. 
  5. Manual dexterity required for repetitive motions.
  6. Minimum visual acuity requirements include seeing to read recipes, temperature gauges, printed instructions, distinguish colors, and look and quality of food.
  7. Must be able to exert weights of up to fifty (50) pounds of force occasionally and up to twenty (20) pounds of force frequently to lift, carry, push, pull, or otherwise    move objects. 
  8. Employee is may be substantially exposed to adverse environmental conditions, such as heat and cold.
